whats the deal with some of the names that they used in RE4 such as Colmillo's for the dogs. does the word Colmillo mean anything or is it just something that capcom came up with?

Its spanish i know that.From a translation into in english its Eye tooth or too show ones teeth i'm pretty sure any other words you may find odd are derived from spanish.

I've found some of the names to be reminiscent of particular characteristics of the monster- Regenerators, El Gigante, etc.
It is also often the Spanish version of a characteristic as well. For instance:

Colmillo: Spanish for fangs
Novistador: a combination of Spanish words 'No' and 'Vista', so together it's 'No Sight' or it can be translated into 'unseen creature'
Garrador: 'Garra' is Spanish for claw.
Armadura: means armor.

ok sweet all those make sense
like the regenerator and el gigante were kinda self explanatory but those spanish ones were the ones that got me
