Probably Suikoden 2's Luca boss fight. Other than that I would say SMT3: Nocturne's Matador.
Chaos Legion had epic boss fight music though.

I ran out of ammo by the time I got to the Wesker fight for the first time... so I had to kill him with nothing but a knife. It took about an hour, but it was well worth it, and AWESOME.

I know im on my second time playing my game, i am finishing it for my dad. I figure it is all his fault he ended up with no ammo! I ussualy end up beating games for him. like 0 and res 4. anyway, is it hard to beat him with just a knife? and how?

The Bio-Lizzard...I honestly didn't care for him much...
Ya, me too..I'm a die hard Crush fan...But, their BEST song is Open Your Heart, which plays during the fight with Chaos lol...Case closed...
My favorite is Jill's battle, where you take the device from her chest, I mean, it's JILL ****ING VALENTINE! and that awesome music is so damn GREAT!
I don't usually play games that have boss fights, but I have played some. Unfortunately I don't remember so many of them, some were in games I played a long time ago. I know there were some in Dark Forces, but I don't remember them, it's more than 10 years ago.
One very memorable that I remember, is Leon vs Krauser in RE4. That was actually the only epic battle in RE4 as far as I'm concerned. The other ones were won too quickly. So I think that was the most epic fight and it's the only fight on my list.
I vaguely remember some great fights in Half-Life, it's about 6-7 years ago so I don't remember the names of the monsters.

yeah Krauser in Res 4 was bad ass! my dad had tough time on him so I finished him off, I played that game like eight times, great game.
And the mini knife-duel with Krauser some time before the actual duel was bad ass too! I almost had to change my underwear.
