Vegan Vegetable People

My significant other has just changed over from eating meat and i was wondering if anyone has any creative innexpensive meal ideas for breakfast, lunch, and dinner. Thanks in advance :D
 
I'm pretty boring when it comes to meals. I do eat a lot of soups though. Tomato bisque/ basil are my favorites. Having a nice roll or slice of bread to dunk it in is great. And if she isn't apposed to diary then sprinkle some cheese on the soup. Heavenly. Especially if it's cold outside. :D

The best thing to do would be to start experimenting with flavors and different sandwich/wraps combinations. It's quick and easy to make, but a good wrap is well....good. XD

Spices become your best friend. Have her be sure to get enough protein though.. I had to go the hospital a few times on account of protein deficiencies... not fun.

Yea i told her the dangers of not getting enough protein and she told me she'll get enough from nuts and hazelnut spreads and whatnot. Do you think that will be good enough? I dont know much about how much the body needs on a daily basis to function properly. She also has thought of taking straight deficiency pills from the pharmacy like one a day womens and such.

She loves spinach but cant stand vegan cheese lol. She tried one of those at the Mellow Mushroom and not only did it put her 40 dollars in the hole but she cant stand to think about any pizza, vegan cheese, or mixture of the two. She loves spices though, just not 'spicey' foods. Her disposition is really quite fatal for reasons i wont mention. But i want to help her out in any way i can. She cant get enough of basil pesto though. And i guess i should have mentioned dairy is out of the question....which puts another very big wrench in every day eating. Can you go more into detail with the cabbage roll?

What all goes into your Tomato basil soup....or is it just that lol. She has also taken canned asparagus and baby portabello mushrooms and cooked them with some non-butter butter and i think she added some spices to it but she then made a wrap out of it. I feel so retarded i cant specifically remember what all went into it but thats all i have lol. Have you also tried Flaxseed waffles?

At your grocery store you can get veggie ground round... quite a few cups of it for a couple bucks. It's made by Yves and it's delicious. You can also use the veggie chilli. Just boil your cabbage.. grab about 12 leaves, spoon on the veggie ground round and whatever other spices you want, fold them over and back them for about an hour covered and half an hour uncovered.

As for the nuts and hazelnut spreads.. um, I'm not sure. They're stocked full of protein yes, but they're also VERY high in fat. It depends on her metabolism... I don't metabolize fat well at all, so can't depend on nuts for the majority of my protein intake. I ate a lot of protein bars, but they get pricey.

Dunno if these links help, but there are a lot of good books to learn from, odd that a meat eater like me would have such books in his collection but i'm all for choice, learning and discovery.

I was a vegan for a little while, and to cut a long story short, i ended up fighting against myself all the time, i was constantly having to eat.

The way veganism was sold to me was frankly, nothing more than a cheap advert on the tv, you know the ones i'm on about...

''makes your hair smooth ''
'' makes your skin beam ''
'' cures you from the T-virus ''

yadda yadda.

I still use my books for cooking ideas because i have some veggie/vegan friends so being a good host, i cook for their needs.

for what it's worth, after my own ventures into the realm of living clean... i've come to this conclusion.

Regardless if you eat meat,nuts or chew on a leaf, it is of the utmost importance to remember two things when consuming...

1, drink the cleanest water you can.
2, no matter if it's meat or nuts, always go for the healithiest for your body.

even though i'm back on meat, i've found i eat less, due to being rigid on quality control, whereas before i'd munch anything.

I hope she enjoys her path, she'll learn alot, and your support will be priceless..

try not see your supporting of her as a hassle, but a chance for you to learn some crafty new skills to.

Nutloaf is boss, i'd recommend looking that up.Will she eat fish?That can change everything about the way a vegan can eat.

And look up in-vitro meat!They take a stem cell thing from a cow and they can grow the meat in a lab and remove any baddies and up any goodies.I'd say if she can last 15 years, it might be available then lol.
 
Soya mince is actually nice - don't know if it contains dairy or anything she can't have though.

Just made carrot and coriander soup for the first time - nice and thick without any cream required. You can batch-cook and freeze it until you want it too. For a couple of pints of the stuff here's what you need:

450g carrots, cubed
1 potato, cubed
2 pints vegetable stock
coriander (you can use fresh but I always have a pot of chopped in the cupboard because it lasts longer)
1 small onion, chopped
salt and pepper, if you want it
a little oil (whichever is vegan friendly)

Heat the oil in a large saucepan and fry the onion for about 5 minutes or until soft. Then add the potato and about a teaspoon of chopped coriander. Give it a minute and then add the stock and carrot. Bring to the boil, reduce the heat, cover and let it cook for about 20 minutes. Pour the whole lot into a blender or processor (I use a hand blender - does the job just as good) and whizz it all up, adding more coriander to taste. I put in about another tablespoon of the chopped stuff but if you do get it as leaves in a pack then add about 25g of it. When it's all blended, test it to see if you want seasoning and then heat however much up you want to eat and nom away. It's really filling, pretty low in fat and stupidly good for you to boot.

If your lady does like spinach, don't forget there is a chemical in it which reduces the ability to absorb the iron in it so have fruit juice with it to help with the absorption. If she's going for vitamins then something comprehensive is best - you can get A-Z vitamin and mineral tablets for very little if you go for supermarket brands. Iron is very important but best not to take extra supplements except on the advice of a doctor or health professional.
 
Thankyou all for posting :D I'm going to try all of these things in the next couple weeks and see which ones she likes the most and i'll post which ones.

Angel: I dont have a blender of any kind which makes me sad because i myself want to make Blueberry pomegranate smoothies so you'll have to wait on yours :( But i might get one soon just for that reason because it sounds good. And she LOVES spinach btw.
 
You can get hand blenders really cheap online from places like Amazon etc. I'd recommend the one I have, if you can get it (I don't actually know where you live on the planet but hopefully nowhere really obscure) - it's stupidly powerful, reasonably priced and you'll never need the turbo setting or indeed any setting past level 2 (there are 16 in all)
