I've never owned a Guncon. Can someone explain how it works? Do you control the game with a normal PS2 controller then switch to the gun for shooting? It would seem tedious to do that if you have to swap controllers so frequently.

Faceless, nameless, stereotypically "badass." HUNK is popular based on the Rule of Cool alone. There are a lot of characters like this in fiction so I'm not too surprised on HUNK's popularity (even if I personally don't care for him much).
There is this double standard amongst Resident Evil fans it seems. It's okay for some of our old favorites to be cheesy but god forbid Moira has any silly lines in Revelations 2.

True enough for the Jill sections. What about the forced action parts with Chris / Parker / Quint & Keith though? Surely the game gives you enough ammo to compensate but I imagine those being the more difficult parts of the challenge.

The two versions are nearly identical. The Wii version has some new controls with wiimote+nunchuck and classic controller but it's also fully playable with a gamecube controller. The Wii version is cheaper and much easier to find.
My biggest gripe with the game is the small amount of characters and stages. It's literally just Mercenaries on a cartridge so you would think that Capcom would go all out and fill the roster to compensate. I'd say it's still worth if you can get it for $15-20 but I wouldn't pay more than that.
It depends on the game. 5+6 I did single player once, but never again. Those games are more fun for me in co-op.
Revelations 1 I sometimes do Raid Mode co-op with a friend of mine who is also a big RE fan. Weekly Revelations 2 local co-op with the same friend has been a great experience so far.
